The couple, the Banqueting Manager and Stephen talk about the menu for the event.
Banqueting
Before talking about the menu you should decide if you want a more formal function
Manager
with a banquet or a less formal one with a rich buffet. It depends on the type of guests
you have. Buffets are more popular with young people.
Miss Gray
There will be a lot of young people, but my grandmother would never forgive me if
we didn’t choose a very formal meal.
BM
Let’s go for a sit-down banquet then! Steve! What menu would you suggest?
Stephen
We’ve got a wide selection of three course menus with a soup or entrée as a first
course, then the main course with a choice of two dishes, the dessert and last but not
least a majestic wedding cake! Or … if you want either meat or fish dishes, then have a
look at this menu here. It’s quite elaborate and impressive.
Mr Jones
Yes, let’s see … That’s interesting … crab timbale, fillet of Scottish lamb, Scottish pork
and Scottish beef! It sounds great! Why do you use so much Scottish meat?
Stephen
My grandmother was from Glasgow and, you know, she taught me to love traditional
cuisine and products, so I often use them: I think Scottish meat is of the best quality!
Miss Gray
This menu is okay, but what about our vegetarian friends? They don’t eat any meat or
fish and there are at least 15 of them!
Stephen
We can arrange an alternative vegetarian menu. Here I have one. Would you like to
have a look at it?
Mr Jones
Let me see … yes, that’s fine for me. What do you think, darling?
Miss Gray
Yes, not bad. But I want a spectacular wedding cake. I was thinking about something
recalling our beautiful London … Big Ben perhaps?
Stephen
Why not something typically Egyptian? A pyramid for example.
Miss Gray
Good idea, but with the sphinx next to it!
Stephen
That won’t be a problem.
Mr Jones
Very well! Now let’s talk about prices.
BM
We must first decide on the wines.
Mr Jones
We‘ll rely on your sommelier, provided that he chooses the best French or Italian wines!
BM
Then this menu is about £100 per person. If you have any extra special requirements
they will be charged separately.
