CHOCOLATE MOUSSE WITH CHILLI PEPPER
Ingredients
150 g plain chocolate, broken into pieces
50 g caster sugar
2 medium free-range eggs, separated
a pinch of chilli pepper
Method
Begin by melting the chocolate in a bowl set over a saucepan
of simmering water, then add a pinch of chilli pepper. Once the
chocolate has melted, remove the bowl from the heat and set
aside.
Next, place the egg yolks and sugar in a large bowl. Whisk with
an electric whisk until light and foamy, then gently fold in the melted chocolate.
In a separate bowl, beat the egg whites until they form stuff peaks, then
gently fold into the chocolate mix. Spoon into serving bowls and leave
to chill in the fridge for 2 / 3 hours before serving.
