HONEYED GOOSE
Ingredients

1 large goose

1 teaspoon dried leaf basil

200 ml honey

1 stick of butter

100 ml orange juice

2 teaspoons lemon juice

teaspoon dry mustard
Method
Mix basil, ginger and salt together. Mix honey, butter, orange and lemon juices and
dry mustard in a saucepan; let it boil for 3 minutes. Put about 1 teaspoon of basil
mixture inside the goose and rub any leftover on the outside. Stuff the goose with
orange slices. Pour half the honey mixture over the goose in a roasting pan. Cover
and roast in the oven at 400° F for 30 minutes. Reduce heat to 350° F, turn the
goose breast down, and roast, basting occasionally with the rest of the
honey mixture, until very tender, about 2
1/2
hours. Turn breast side up
for the last half hour to brown.
